Red Quinoa & Spinach Salad

This is yet another stolen cafe salad. This one took a while to figure out and I had to question the cafe for last couple of ingredients. I know i'm a terrible person! In my defence... nope. I have none.

This takes as long to put together as it takes for the quinoa to cook. It doesn't keep that well given the baby spinach, so best enjoyed on the day.

The protein from the quinoa makes this a great dish on it's own but i have served it with lamb chops and chicken before and it worked out well.

Ingredients

1 bag of baby spinach leaved (about 100g)

1 cup red quinoa (cooked as per instructions in the packet), then cooled

½ cup cooked brown rice – then cooled

1/3 cup dried cranberries (chopped roughly)

1/3 cup torn mint leaves

4 spring onions, finely sliced

¼ cup pepidas

¼ cup sun flower seeds

Dressing

1 tbs honey,

Juice of one lime

¼ cup olive oil

Method

Mix until combined and pour over other ingredients.
