Em's Edamame

My friend Em made this a few years ago and it because my favourite way to enjoy this yummy Japanese snack! I will often have bags in my freezer ready for when i have a craving. I know this is supposed to be a light starter, but I often will make this for a quick vegetarian dinner when i really can't be bothered with anything else!

Warning - this has a lot of garlic, so unless everyone else is having some, i suggest you enjoy this on your own.. having said this, it's hard to find someone who will say no to this!

Ingredients

1 bag of frozen edamame (still in pods)

1 red chilli, seeds removed and finely chopped

2 Tbs olive oil

2cm ginger, finely chopped

3 cloves garlic, finely chopped

3 Tbs Sweet soy (gluten free) / kekap manis

Salt to taste

Method

Thaw Edamame in a bowl with boiling water. Meanwhile, add the oil to a hot pan and thrown in chilli, ginger and garlic. Be careful not to burn these, you just want them to become fragrant. Then add the edamame and toss to coat and heat through. Add the soy sauce along with salt and cook for another couple of minutes until the edamame are coated and hot.

Serve straight away!
