Chicken Mango Salad

This recipe is yet another stolen cafe salad. I think this one was from Melbourne's equivalent of the boat shed. This is a great salad on a hot summers day. Can be served on its own and goes great in a crusty baguette. I tend to make this for picnics and when i see roast chickens reduced!

It keeps well for a couple of days and this recipe will serve 6 comfortably!

Ingredients

1 roast chicken or 4 chicken breasts

1 red capsicum

100 g snow peas

1 mango

3 heaped Tbs good quality mayo

3 celery stalks

Method

Shred chicken meat and cut vegetables and mango flesh to similar size pieces.

if using chicken breast, then poach in chicken stock for 15 minutes.

Squeeze the mango stone, effectively juicing it. Should make about 2/3 cup of mango 'juice'. Add the may and stir to combine. Then stir through salad ingredients and enjoy!
