Broccoli Salad

This is the first broccoli hero I've put up. I love broccoli, so not sure why it has taken me so long... This is a quick and easy to recipe and saves well for the next day. You can add anything you really want to this or leave things off - as long as you have the broccoli and the dressing, the rest if up to you.

This serves 4 as a side or good as a summer salad for a BBQ. It takes about half an hour to put together.

Ingredients

2 medium sized heads of broccoli

6 slices of prosciutto

3 spring onions, sliced thinly

1/3 cup flaked almonds

1/4 cup raisins

Dressing

1/2 Tbs caster sugar

2 Tbs white wine vinegar

4 Tbs heaped good quality mayo

salt and pepper to taste

Method

Cut the broccoli in small bite sized florets. Cook in a pan in batches or blanch the broccoli in boiling water for 1 minute and then lay on paper towel to dry fully. The broccoli should still have some bite to it.

Transfer to a bowl and the almonds, raisins and spring onions. meanwhile cook the prosciutto until crispy and then crumble int the bowl with the other ingredients.

For the dressing, put all the ingredients in a jar and shake until well combined. Pour over the salad and mix well to combine.

Tips

Don't add all the dressing at once. Dress to your liking, it tastes good with even a little, but that could be my love of brocoli talking..
