Fried Rice

I love fried rice. Is it wrong that I order it instead of plain rice even when i order curry...?

This takes about an hour and serves 4-6 people. It keeps really well for lunch the next day too, so definitely a winner.

Ingredients

3 eggs

2 cups rice, cooked

4 spring onions, sliced

4 rashers of bacon, cut into bite sizedstrips

1 large carrot, finely chopped

1 bunch asparagus, chopped

300 g cup mushroom, chopped

1 red chilli, finely chopped

3 Tbs oyster sauce

4 Tbs oil

1 tsp soy sauce (GF)

1 tsp sweet soy sauce (GF)

Method

Have the rice ready to go and cooled.

Cook the bacon, carrot, asparagus and mushrooms, one a time and set aside before moving onto the next ingredient.

Clean the pan and pour the beaten eggs one at a time in the pan and swirl around until a thin layer covers the pan (similar to making crepes). Once cooked, roll it up and cut into strips and add to the rest of the cooked ingredients. Repeat for each egg. Now add everything back in the pan and add the spring onion and chilli and heat up for 2 minutes.

finally, add the rice and pour the oyster sauce, oil and soy sauces over everything and mix well until rice has heated through.

Add more oyster sauce to taste if you like.

Tips

Make the rice a day ahead, so it has time to cool in the fridge and dry out.
