Quick Zucchini Salad

This is a simple salad you can have on its own or serve as a healthy side with fish or meat as i have i the picture. the recipe serves 2 but its so easy to multiply. It takes 10 minutes to prep so as your meat or fish cooks, you can get onto this for a really quick weeknight dinner.
Ingredients
1 large zucchini
1/4 cup pumpkin seeds
1 Tbs balsamic glaze
Salt and pepper to taste
Method
Grate the zucchini, using the larger option. Salt and leave for 5 minutes for the liquid to come out.
Meanwhile, toast the pumpkin seeds until slightly golden. Squeeze out the excess liquid ( the more you can get out the more concentrated the flavour of the salad).
Now add the pumpkin seeds to the zucchini and drizzle the balsamic glaze and toss through. Add more salt to taste and crack fresh pepper.
Tips
the more liquid you can get out of the zucchini, the better. The zucchini will continue to release liquid and if you don't get enough out, you'll end up with a sloppy salad.
